Although the colour of champagne is generally ‘white’—ranging from pale straw through to a golden honey hue—your champagne may actually be made with a blend of both white and ‘black’ (red-skinned) grapes. The most common blends, or assemblage, will use combinations of Chardonnay, Pinot noir and Meunier. Each grape variety brings a different characteristic to the wine’s profile: Chardonnay provides elegance and improves the aging of the wine, Pinot noir adds power and structure, and Meunier delivers roundness and fruitiness.
Champagne blends can also be made from fruit harvested in the same year (vintage) or multiple years (non-vintage). Along with structure, each grape varietal imparts a distinct aromatic personality to the assemblage, drawn from the typicity of the varietal and its unique growing region.
