Élégance comprises a blend of biodynamically cropped Pinot noir (84%) and Chardonnay (16%) from vineyards in the villages of Buxeuil and Montgueux, respectively. The Pinot noir is grown on Kimmeridgian soil of marly clay-limestone, which contains fossilised marine deposits that impart a distinct minerality to the cuvée, whereas the Chardonnay vines are rooted in chalk and flint soil. Sitting on steep slopes, the Pinot noir vines are mainly exposed to the south and the west, enjoying a unique microclimate of high temperatures and consistent humidity due to their proximity to the Seine River at the foot of the hills.
The current release was partly vinified in oak barrels (21%) and complemented with reserve wines. Aged for two years on lees, Élégance was disgorged in December 2021 and finished with 4 g/L dosage.
Aromas of red fruit, brown pear, biscuit and dried apple unwind along the glass as the cuvée flutters like gold satin sheets with each hypnotic swirl. Opening bright and fresh, Élégance deepens on the palate with flavours of redcurrant, persimmon and ripe stone fruit as crunchy apple and lively minerality provide textural grip. Dry and chalky, the impressive finish lingers long with hints of crème caramel and hazelnut.
