Cartography

In her typically innovative way, Sally decided to create a unique map to illustrate the diversity of the Champagne appellation d’origine controlee (AOC). Working in close consultation with a cartographer, she created la carte – the cornerstone of the Sally Hillman experience. The aim of the maps is to demystify Champagne and make the appellation more understandable using a visual approach. Each region is colour-coded, with the actual vineyards marked in a darker shade. The hues of each region suggest the season best reflected in each region’s champagne style.
