Blanc de Blancs champagnes are produced exclusively from white grapes—predominantly Chardonnay—hence the name, ‘white from whites’. Due to their high, bracing acidity, Chardonnay-based cuvées have the greatest aging potential, and they often develop complex nutty aromas and a biscuity creaminess.
