Jacques Lassaigne La Colline Inspirée

Bottle

La Colline Inspirée, or the ‘Inspired Hill’, is a blend of slightly older vintages. It is an elegant cuvée with a taste profile similar to a white burgundy, yet with effervescence.

Best enjoyed from the Lehmann Jamesse Prestige, Synergie 75 handmade glass.

Composition

A non-vintage blanc de blancs, or 100% chardonnay based champagne, the cuvée is a blend of three successive vintages ; 2014 – 48%, 2013 -35%, 2012 – 17%. With zero dosage there is an unmasked expression of the chalky terroir and the chardonnay grape. The wine is vinified in neutral oak barrel so there are no obvious oak aromas.

Taste

Rich in mineral content and creamy, the wine shows notes of lemon curd, tropical fruit and hazelnut, finishing with a delightful salinity.

Food match

Perfectly paired with a crumbed King prawn in a petit brioche roll with wasabi mayonnaise.
