Haut Revers du Chutat is Côteaux Champenois Blanc, or a still white wine from Champagne.
Made in limited quantities by Emmanuel Lassaigne and only in riper vintages when the acidity is too high for making champagne. The grapes are from the lieu-dit, Haut Revers du Chutat located at the top of a south facing limestone slope in the village of Montgueux with vines that are over 50 years old.
Akin to drinking a white Côte de Beaune, it shows ripe tropical fruit with a finish of intense saline minerality.
Perfectly paired with freshly cooked scampi served with homemade aioli and lemon wedges.
