With a composition of 70% pinot noir and 30% chardonnay and only two grams per litre of dosage, this champagne is a blend of three consecutive previous vintages. Its greatest point of difference is the amount of time aged on lees; 48 – 52 months. Made with a natural approach, the wine clarifies slowly and at least 50% is fermented and aged in oak.
Powerful and rich as any good red burgundy, whilst also mineral, elegant and fresh with a pure acid line in the finish of the wine on the palate.
The richness is powerful enough to match beautifully with chargrilled lamb cutlets and a seasonal green side.
