Special Cuvée NV offers the purest expression of the Bollinger style, bringing together subtlety, depth and complexity for moments of conviviality. A precise blend of several harvests, including a majority of reserve wines held in magnums for 5­–15 years, Special Cuvée NV comprises 60% Pinot noir, 25% Chardonnay and 15% Meunier. More than 85% of the fruit comes from Grand Cru and Premier Cru villages, and cellar maturation time is twice as long as required by the appellation.

Pair with salmon sashimi served with wasabi and soy sauce, or lightly battered and fried fish fillet served with tangy tartare sauce.
