In 2018, Sally created a unique map to illustrate the diversity of the Champagne appellation, collaborating closely with a professional cartographer to create ‘la carte’—the cornerstone of the Sally Hillman Expérience.

Our signature maps aim to demystify Champagne and make the appellation more understandable using a visual approach. Each region is colour-coded, with the actual vineyards marked in a darker shade, while the hues suggest the season best reflected in each region’s champagne style.

For example, the Vallée de la Marne is a region known for its diverse champagne styles, which range from big and fruity to salty and minerally. On Sally’s signature cartography, the Vallée de la Marne is shaded in a lush verdant green to reflect the wines’ compatibility with the fresh flavours of springtime produce, such as spring lamb, sweet young asparagus and fresh green peas.
