‘Extrait’ is a direct translation of extract and readily describes this wine. The wine is difficult to create and the quantities made are small. It spends up to 10 years on lees, with zero dosage, before being disgorged by hand. It is produced using a blend of chardonnay and pinot noir with the composition based on the harvest quantities for that vintage.
Dry but not harsh, with a long, lingering finish on the palate. Intense citrus aromas of tangerine and blood orange combine beautifully with the aged qualities of chardonnay; toast and brioche and pinot noir; dried fruit, nuts and wild red berries.
Best enjoyed from the Lehmann Jamesse Prestige, Grand Champagne 45 glass.
Perfect with gusty provençal tapas style dishes as well as cheese.
