The key, as it is to most things champenois, is the terroir, so Pinot Blanc, tolerating frost and humidity well, was planted in the village of Celles-sur-Ource because both are prevalent conditions in the river valley village. It is named L’Originale for its heritage as the House of Pierre Gerbais were the first to produce champagne from 100% Pinot Blanc. This heirloom grape variety is nearly 25% of the House’s total plantings, making Gerbais the most influential producer in Champagne in regard to Pinot Blanc. The grapes come from vines planted in 1904 in a single parcel of land, or lieu-dit known as “Les Proies” and the parcel is vinified separately to maintain the individuality of the grapes. Production quantity is only 3000 bottles per year. The dosage is 3-4g/L.
Pinot blanc is similar to chardonnay in taste and this cuvée combines ripe flavours, typical of the region with an elegance and sophistication hard to achieve for the grape variety.
Perfectly paired with a crumbed fillet of Lakes Entrance whiting, topped with caviar.
