Heralding from the Grand Cru village of Bouzy in the Montagne de Reims, the heartland of pinot noir, Jolivettes is a Blanc de Noirs or 100% pinot noir champagne made with grapes from a single 0.6 hectare plot. The vines on this site are more than 30 years old, having been planted in 1997. All winemaking takes place in oak, the ageing on lees is for 8 months and the champagne sees a small dosage of 1 g /L.
Rich and creamy with complex berry and stone fruit notes, it finishes strongly with an elegant, chalky minerality.
Delicious paired with duck liver parfait, served traditionally with cornichons and toasted baguette.
