Nicolas Maillart 'Chaillots Gillis' Brut Nature 2012



Chaillots Gillis is a Blanc de Blancs (100% Chardonnay) champagne sourced from two different parcels of vines (or lieu-dits), named Les Chaillots and Les Gillis, in the Premier Cru village of Écueil.

Both parcels have a southern exposure and were planted in 1963 by sélection massale (the traditional practice of vineyard propagation with exceptional old vines). Viticulture involves biodynamic, organic and traditional practices, and vinification takes place gently in wooden vats, with wines avoiding malolactic fermentation and undergoing lengthy maturation.

Aided by zero filtration and dosage, Nicolas expresses the two terroirs with great elegance and finesse as Chaillots Gillis displays baked fruit and minerality bolstered by an intense freshness.

Produced in limited quantities and only in the best vintages, the 2012 release was only 3648 bottles.


Golden yellow with a fine, lingering bead, Chaillots Gillis unwinds with a soothing perfume of fruit mince pie and shortbread pastry. On the palate: fresh citrus zest and lemon sherbet, followed by delicate minerality and a savoury vinosity before a long and rounded finish—an enchanting journey evocative of a delicious key lime pie with a fluffy whipped cream topping.
