Disgorged September 2018. Terre de Vertus 2012 is 100% Côte des Blancs chardonnay coming from the chalky 1er Cru plots of Les Barillers and Les Faucherets, mid-slope in the village of Vertus. After gently pressing the grapes, the juices go directly into wood with both the alcoholic and the malolactic fermentations beginning naturally. The wines are matured on natural lees during their first year, undergoing gentle bâtonnage. There is no filtering or fining prior to bottling and the wine is non-dosé or zero dosage. Terre de Vertus has been non-dosé since the mid ’90’s, long before it was fashionable!

Pair simply with freshly schucked oysters.
